制作烧卖 “sio bee” (可制作230粒)的材料和制作过程:
材料:猪肉(8公斤前腿碎肉), 马鲛鱼200g , 虾肉 300g , 白地瓜 1.7 公斤 , 洋葱 900g , 青葱 200g , 大薯粉 500g , 面粉 200g , 猪油渣适量加在碎肉中,胡萝卜.
调味料:适量的盐 , 味精 , 胡椒粉 , 鸡精粉 , 糖 , 蚝油 , 麻油 , 生抽 , maggie sauce .
制作过程:1. 马鲛鱼 , 虾肉 , 白地瓜 , 洋葱 , 青葱 必须切成碎粒.
2. 放入所有材料 , 调味料 , 搅拌15分钟 确保材料搅拌均匀..
3. 搅拌时, 慢慢放入面粉 , 再而外加点大薯粉, 再搅拌至所有材料均匀后,取出来置放在几个盆子内..之后再把盆子里的肉倒出来, 用手掌取肉上来再往下抛五六次(称为打肉)之后就可放进碗子开始包了..
4. 将搅拌后的馅料用烧卖皮包起来,做成如一朵小花, 再沾上少许切碎的胡萝卜,放在已涂上少许菜油的托盘上.
5. 用大火蒸约12分钟,即可享用.
注意: 制作烧卖最重要的是调味料要配得好,那么制作出来的 “sio bee” 一定很好吃!
白地瓜是制作烧卖的重要材料之一,必须先切丝再切碎!
材料也可放入搅拌机搅拌至所有材料均匀!
把烧卖放进蒸炉之前,确定开水已经沸腾了!
烧卖只能放冰箱冷冻一个星期罢了以确保它的新鲜感!
