Ingredients | 材料:1 kg deboned chicken whole leg (skin intact, cut 1.5cm cubes) |全鸡腿肉1公斤(连皮切1.5公分小块), Cucumber and onion (wedges) |切块黄瓜和大葱适量

Chicken marinade |腌料 : 80 g castor sugar |细糖80克, 2 tsps salt or to taste |盐2茶匙, 5 stalks lemongrass (finely ground) |香茅5枝(研磨至细), 10g ginger(finely ground) |姜茸10克, 1/2 tsp turmeric powder |黄姜粉1/2茶匙, 2 tsps cornflour |生粉2茶匙, 2-3 Tbsps cooking oil |食油2-3汤匙

Peanut Sauce Satay Sauce |花生酱:
A: 10 -15 stalks dried chillies (soaked) |辣椒干10-15条(浸泡), 1 big onion |大葱1粒, 6 stalks lemon grass(sliced), 8 g ginger , 8g fresh turmeric, 8g galangal |香茅6枝、姜、黄姜及蓝姜各8克

B: 300 g peanuts(fried & ground) |烤花生300克(磨碎), 3 cups water |清水3杯 , 80g palm sugar |黄糖80克 , 1 tsp salt /to taste |盐1茶匙, 1 tbsp tamarind paste + 3 tbsps water to make tamarind juice(sieved) |亚三膏1汤匙+3汤匙清水洗出汁, 30- 35 pcs Bamboo skewers, cooking oil for basting |竹枝30-50枝、刷油适量

Method | 做法:
1. Marinade chicken with marinates for at least 1 hour in the refrigerator or preferably overnight.(pic 1-2)
用腌料腌鸡肉,收在冰箱至少一小时,最好腌隔夜。(图1-2)

2. Using bamboo skewers, thread 3-5 pieces of meat on one skewer, continue until all the meat is skewered.(pic 3)
用竹枝串3-5块鸡肉,重复步骤至材料用尽。(图3)

3. Place the skewered chicken meat onto a greased tray and bake in a pre-heated oven @ 190℃ for 10 minutes and drizzle with extra cooking oil. Turn over and continue grilling until the chicken is cooked. (pic 4)
把鸡肉串放在涂油烤盘里,然后放入预热烤炉以190C烤10分钟,间中刷上额外的油,翻转再烤至熟。(图4)

4. Serve with peanut sauce, and freshly cut cucumber & onions.
配花生酱,黄瓜及大葱吃。

To prepare peanut sauce |花生酱做法
1. Finely blend the peanut sauce ingredients A, and then sauté with hot oil until fragrant.(pic 5-6)
把花生酱材料A研磨至细,然后以热油炒至香。(图5-6)

2. Add in peanut sauce ingredients B and adjust taste. Simmer for 10 -15 minutes or until the peanut sauce is fragrant and thick. Turn off heat & serve with satay. (pic 7-8)
加入花生酱材料B,调味,慢火煮10-15分钟至稠即可。(图7-8)
