Don’t forget the dough kneading noodles like the pan mee, and mee hoon kuin. If you think that’s hard to pick, wait till you explore the vegetarian noodles. They are different in a unique way where it is not superbly fantastic, but attractive in its own way. The Yam Mi Fen has the slices of mock fish in it as well. It is probably the vegetarian version of fish head noodle. The use of yam in the soup is brilliant.

The shiang hai noodle is served at a very generous portion and the addition of beansprout to the noodle is amazing when it comes to the texture in general.
