I've only discovered my first pan mee at the age of 25; prior to which, I've never even heard about the dish. Since then, I've found myself occasionally exploring new stalls or shops that sell it, especially those that seem to specialize in it or serve only that.This is another random stall I tried. Pretty decent texture, springy and just the right thickness. Served hot, with sweet and salty sauce - just the right balance. Too little pork and other trimmings, though. But still, pretty decent.

This is another random stall I tried. Pretty decent texture, springy and just the right thickness. Served hot, with sweet and salty sauce - just the right balance. Too little pork and other trimmings, though. But still, pretty decent.
