I don't know who Benedict is, but the eggs that are made in his name are one of my favourite Western breakfast items of all time. The eggs are poached nicely, with the yolk being soft but not overly runny (so it doesn't flood your plate), and the bread is just nicely lightly toasted to have a bit of crisp, yet still be fluffy and moist.
