The braised pork belly with yam is really a dish for those who don't really care about fats and cholesterol. Honestly, putting health issues aside, this dish is really delicious. The pork belly has the notorious three layers, meaning the skin and fats for the first layer, the lean meats as the second layer and the fats again as the third layer. When holding the pork belly in between my chopsticks, the pork belly was just unashamedly bouncing. The pork belly was soft, tender, juicy and flavorful.
