Traditional way of cooking food is using the charcoal. This is way before the gas was invented. Till now there are still some of the restaurants still using charcoal to fry things. This restaurant is one of the good example. The hokkien mee here has the very strong wok hei taste. You cant really describe what is wok hei, but when you take your first bite, you will know. Then I will request for extra pork lard because it makes the noodle more tasty.
