continue reading

When it comes to curry noodles, there are many renditions of the popular Malaysian dish out there. My favourite is the one at 747 (SFS) at Aman Suria.Springy wantan noodles, large fried wantans, smokey char siew, bean sprouts, long beans, in a thick curry base, accentuated with mint, lime and chilli paste. If I were to sum up the flavours in one word, it would be "intense".The char siew is super smokey and chunky (as opposed to the silkier, sweeter types), and works wonderfully in this dish. The large fried wantans have plenty of meat (pork) with a good ratio to the crispy wantan skin. I like to leave it semi-soaking in the thick aromatic-spicy curry until towards the end of the meal, by when the wantans would've soaked up just enough curry without being too soggy and still retaining some crisp.I like to have a little bit of everything with each mouthful, and not passing off the mint as merely a decoration, but an important part of the dish. It really ignites the curry's rich aroma! My only grievance is that eating here regularly is a sure way towards heart disease in the future. continue reading
