Traditional way of cooking food is using the charcoal. This is way before the gas was invented. Till now there are still some of the restaurants still using charcoal to fry things. This restaurant is one of the good example. The hokkien mee here has the very strong wok hei taste. You cant really describe what is wok hei, but when you take your first bite, you will know. Then I will request for extra pork lard because it makes the noodle more tasty.

Smooth, flavorful noodles fried over charcoal instead of gas bring out the best flavors of this all-time Chinese Hawker favorite. The texture of the noodle is just right; chewy and not too soggy. The amount of the black sauce and pork oil used to fry the noodles are generously awesome; creating a sinful yet undoubtedly delicious plate which definitely resulted me in ordering seconds to share with dearest hubby.
