明记炭烧瓦煲鸡饭虽然是以大排档的方式经营，但却远近驰名吸引了不少饕客前来探访，由于明记坚持用炭烧烹饪瓦煲鸡饭所以煮出来的鸡饭都特别的香，每当想去吃的时候远远就能闻到了鸡饭的香味。上桌后鸡饭上会有一小碟的咸鱼，把咸鱼倒进热腾腾的饭内，然后和饭一起搅和，令人感觉能吃上三碗饭似的，不但如此鸡肉也煮得很滑嫩，配上腊肠真的是非常美味
