Unagi, or know as Eel can be found in most Japanese restaurant here. It can be so delicious be it a slice on top of a sushi, in a bento box and most important it must be eaten with that sweet teriyaki sauce and rice! But do you know Unagi fish fats is rather higher than an ordinary fish, therefore when it is grilled with thick sweet sauce and flavorings, it might contain more excessive fats than you know. Another healthy way is to steam it to reduce and eliminate the fats off. Since you have tried grill Unagi on its own, have you try using them in fried rice?

Japanese Unagi with Shrimp and Garlic Fried Rice | 日本鳗鱼和虾仁蒜茸炒饭

鳗鱼炒饭,日本鳗鱼和虾仁蒜茸炒饭,虾仁,食谱, Unagi Fried Rice, Recipe

Ingredient and Portion | 材料与分量:3 tbsp butter | 牛油 3汤匙, 2 eggs (beaten) | 鸡蛋 2粒 (打散), 200g shrimp | 虾仁 200克, 50g chopped spring onion | 青葱花 50克, 20g chopped garlic | 蒜茸 20克, 800g Japanese white rice | 日本白饭 800克, 250g Unagi (diced) | 鳗鱼 250克 (切粒)

Seasoning | 调味料:1/2 tbsp Japanese soy sauce | 日本酱油 1/2汤匙, 4 tbsp Teriyaki sauce | 日本烧酱 4汤匙, 1 tsp Japanese pepper | 日本胡椒粉 1茶匙

Topping: | 撒面用:20g juliennes seaweed | 紫菜丝 20克, 2 tbsp fried chopped garlic | 炸脆蒜米粒 2汤匙, 1 stalk spring onion (chopped) | 青葱花 1颗

Method | 材料:
1. Heat butter in wok, saute egg until fragrant, toss in shrimp, chopped spring onion and garlic.
烧热牛油,炒香鸡蛋,加入虾仁、葱花和蒜茸炒香。

2. Add in white rice and seasoning, stir-fry until well mixed, off heat. Make a well in the centre, pour in unagi and cover the rice, simmer for 3 minutes.
加入日本白饭和调味料炒匀至香,关火。扒个洞将鳗鱼粒倒入盖上3分钟。

3. Dish out, sprinkle toppings and serve.
盛起,上碟撒上紫菜,脆蒜米和葱花即可享用。

Tips | 贴士:
Do not over heat the butter, it burns easily.
烧热牛油不可以用太大火,牛油很容易烧焦。

  • After recovering from sickness like cough and phlegm, diarrhea, fever, flu, Hyperlipidemia, Obese patients or suffering from bronchial asthma, skin disease, cancer or lupus disease patients should avoid taking eel fish dishes. 病后脾肾虚弱、痰多、泄泻者,风寒感冒发烧期间,高脂血症和肥胖者以及患有支气管哮喘、皮肤瘙痒症、癌症、红斑性狼疮病症者不宜食用。
  • Patients with chronic disease and patients with seafood allergies, kidney or spleen problem patients should restrain from eating these food! 患者慢性疾患和水产品过敏史的人、病后脾肾虚弱、咳嗽痰多及脾虚泄泻者忌食。
