身为面控的小编(小编是指能吃的面,不是脸面),意大利面是小编的最爱之一。又滑又嫩的意大利面,再搭配新鲜的蔬菜或是海鲜都非常好吃!吃意大利面就是要用叉子卷起来吃才会更有feel阿!在外面吃一餐意大利面总是不便宜,所以小编为大家整理了以下的食谱,让食客们都能自己动手做出美味的意大利面!还可以和家人一起分享!

1. 肉碎意大利面|Spaghetti Bolognaise

材料4人份:
350克 意大利面条|400毫升 水|盐和胡椒粉调味|荷兰芹屑|50克 芝士丝
Ingredients for 4 pax:
350 gm spaghetti|400 ml water| Salt & pepper to taste |Chopped parsley 50 gm grated Parmesan cheese

肉碎酱汁:
60毫升 橄榄油|1粒 洋葱 - 切碎|2瓣 蒜头 - 切碎|300克 绞碎鸡肉|400克 罐装整粒番茄 - 搅烂|1/2茶匙 混合香草|1粒 鸡精块
Bolognaise sauce:
60 ml olive oil|1 onion - chopped finely|2 cloves garlic - chopped finely|300 gm minced chicken| 400 gm canned whole tomatoes - blend till fine|1/2 tsp mixed herbs| 1 chicken stock cube 

做法:
1. 烧热油,加入洋葱屑和蒜茸炒至软,加入绞碎鸡肉炒 5 分钟。加入罐装番茄、混合香草和鸡精块。
2. 把混合料煮滚,改小火煮至浓稠。
3. 把意大利面放入一大锅加了盐的滚水内煮至刚熟,滤干,配肉碎酱汁。
4. 撒下芝士丝和荷兰芹屑便可。
Method:
1. Heat oil, fry chopped onions and garlic till soft, add minced chicken and cook for 5 minutes, then stir in canned tomatoes, mixed herbs and chicken stock cubes.
2. Bring to the boil, reduce heat and simmer till sauce is thick.
3. Boil spaghetti in large pan of salted water till al dente (means firm to the bite), drain well and serve with bolognaise sauce.
4. Sprinkle cheese and chopped parsley on top.

2. 乌龙醺鸭波菜细意粉|Smoked duck breast spinach angel hair

材料:
鸭胸肉 300克2副|帕美森芝士茸 100克|干奥立岗香草 2撮|蒜头 4瓣(剁碎)|橄榄油 100毫升|盐和黑胡椒碎 适量
Ingredients:
2 breast duck meat (about 300g)| 100g Parmesan cheese (grated)| 2 pinch dry oregano| 4 cloves garlic (chopped)|100ml olive oil| salt, black pepper crushed to taste

波菜细意粉材料:
面包粉 300克|鸡蛋 100克|日本波菜叶50克|橄榄油 15克|盐 1小撮
Spinach angel hair:
300g bread flour |100g egg |50g Japanese spinach Leaves|15g olive oil|1 pinch salt

卤水料: 
盐 25克|乌龙茶 500毫升(室温)|黄糖 6克
Brine:
25g Nitrite salt|500ml Oolong Tea (room temperature)| 6g brown sugar 

醺料:
乌龙茶叶 15克|白米 50克|黄糖 20克|清水 10毫升
Smoke agent:
15g Oolong tea leaves| 50g rice (grain) |20g brown sugar| 10ml water

波菜细意粉做法:
1. 把菠菜叶和鸡蛋一起研磨成泥。
2. 把菠菜泥加入挖井的面包粉里,搓成滑面团,然后醒30分钟。
3. 把面团擀平,以制面机绞成细意粉。
4. 用加了盐和15克橄榄油煮开的水把意粉川烫至熟后浸泡在冰水里。
5. 滴干面条后以少许橄榄油拌均。
To prepare spinach angel hair:
1. Puree spinach leaves with egg in a blender. 
2. Place bread flour in a mixing bowl, make a well and add in spinach puree. Knead into a smooth dough. Rest for 30min¬utes. 
3. Flatten the dough and shaped into angel hair by using pasta machine. 
4. Cook angel hair in boiling salted water with 15gm olive oil. Refresh in ice water once angel hair is al- dente. 
5. Drain and toss with extra olive oil, keep aside for later used.

醺鸭做法:
1. 把卤水材料混合后放入鸭肉,浸泡隔夜。 
2. 把鸭肉从卤水取出后,抹干,然后蒸10分钟。 
3. 用铝箔铺锅底,然后放入醺料,开火煮至出烟。
4. 把鸭肉放上架子,加盖,醺5-8分钟即熄火,然后留在锅里冷却10分钟后才切片。 
To prepare the smoked duck:
1. Combine nitrite salt, oolong tea and brown sugar in a con¬tainer. Soak duck breast in brine overnight. 
2. Remove duck breast from the brine, pat dry and steamed for 10mins.
3. Line wok with aluminium foil topped with smoke agent such as tea leaves, sugar and rice; add a little water to moisten them. Heat them till smoky. 
Place a rack in the wok and arrange the steamed duck breast. 4. Cover with aluminium foil. Let it smoked for 5-8min¬utes. Remove from heat and allow cooling. Allow 10minutes resting before slicing.

吃法:
1. 用橄榄油把蒜茸和干奥立岗香草炒香。
2. 加入菠菜细意粉、盐和黑胡椒碎炒均。
3. 加入醺鸭肉片,炒均后撒上芝士茸即可。
To serve:
1. Sautéed garlic and oregano with olive oil in a pan. 
2. Add in spinach angel hair and season to taste with salt and black papper crushed. 
3. Tossed in sliced smoked duck. Served hot with parmesan cheese. 

3. Pappardelle Carbonara

材料:
Carbonara 酱汁|培根|盐 (少量)| 宽带面|意大利芝士|香菜|鸡蛋
Ingredients:
Carbonara Sauce| Bacon| Salt to taste| Pappardelle| Parmesan Cheese| Parsley| Egg 

做法:
1. 准备好carbonara酱汁
2. 面放入沸腾的盐热水里煮熟
3. 煎培根
4. 把酱汁煮一煮
5. 放面一起和酱汁捞一捞
6. 放香菜和鸡蛋,上盘。
Method:
1. Ready the carbonara sauce.
2. Cook the pasta in a large pot of boiling salted water, then drain it.
3. Pan-fry the bacons. 
4. Add in carbonara sauce and cook together.
5. Return the pasta to the pan, cook with sauce and bacons.
6. Lastly, put some parsley and pouch egg, serve hot.

4. 照烧鸡意粉|Teriyaki Chicken Spaghetti

材料A:
去骨鸡腿肉(以适量日本酱油腌妥)|照烧鸡酱 50克|意大利面条 170克(根据包装指示烫熟)
Ingredients A:
1pcs chicken chop (marinated with shoyu)|50ml teriyaki sauce|170g spaghetti (boil to al-dente) 

材料B:
橄榄油 40毫升|葱茸 20克|蒜茸 5克|蒜片 5克|海苔 10克(切碎)
Ingredients B:
40 ml olive oil|20g chopped onion| 5g chopped garlic| 5g garlic sliced| 10g Wakame(chopped) 

材料C:
鸡高汤 150毫升
Ingredients C:
150 ml chicken stock 

材料D:
美乃滋酱 5克|洋莞荽茸 1克
Ingredients D:
5g mayonnaise|1g chopped parsley 

调味料:
盐和胡椒粉 适量
Seasoning:
Salt & pepper powder 

做法:
1. 将鸡肉烤熟后,放入日式照烧酱内煮3分钟至入味备用。
2. 另外起锅热橄榄油,把材料B 炒至出味。加入鸡高汤煮至滚,加入调味料。
3. 再加入意大利面条,煮至满意程度即可盛入碟子里。
4. 把照烧鸡切片后放在意大利面条上,挤上美乃滋酱,撒上洋莞荽即可享用。
Method:
1. Grill chicken chop to golden brown and braised in Teriyaki sauce for 3 minutes, set aside.
2. Meanwhile, heat up a frying pan, add in olive oil and stir fry ingredients B until flavored. Add in chicken stock and bring it to boil, season with salt and pepper.
3. Add spaghetti into frying pan and stir fry until perfection. Then place on a plate gently.
4. Slice the Teriyaki chicken and place on top of spaghetti, drizzle with mayonnaise. Garnish with chopped parsley and ready to serve.

5. 蒜香辣虾意大利面|Spaghetti Aglio Olio with Prawn

材料 A:
意大利面250克|鲜虾10只 |罗勒叶5克(切丝)
Ingredients A:
250g spaghetti | 10 prawns |5g basil (julienne)

材料 B: 
蒜片10克|鲜香菇50克(切片,炒至干身)|辣椒碎5克
Ingredients B:
10g garlic slices|50g shitake mushroom (sliced and prefried) |5g chili flake 

调味料:
盐适量|鸡精粉适量、黑胡椒粉适量
Seasoning:
Dash of salt |chicken powder & black pepper 

做法:
1. 准备锅热水加少许油,待水煮沸后放入意大利面煮至熟透,盛出滴干。
2. 准备平底锅倒入少许油,爆香材料B后再加入鲜虾炒熟。
3. 加入意大利面和调味料一起捞匀,再拌入罗勒叶即可。
Method:
1. Bring water to boil with some oil, put in spaghetti to scud until cooked, drain.
2. Heat skillet with some oil, saute ingredients B until fragrant, then add in prawn and stir-fry until cooked.
3. Add in spaghetti and seasonings, stir to mix and then toss in basil, done.

6. 奶油海鲜意大利面|Seafood Spaghetti in Creamy Sauce

材料:
洋葱 1 颗|意大利面 1/2 包|小番茄 10颗|大蒜 3-4 瓣|奶油 1 大匙|高汤 2 杯|无糖动物性鲜奶油 0.5杯|新鲜 15只|九层塔 少许|海盐 少许|黑胡椒粉 少许|帕玛森起司粉 少许
Ingredients:
1 Onion|1/2 bag Spaghetti |10 Cherry Tomatoes |3-4 Clove Garlic | 1 tbsp Butter |2 cup Soup Stock |0.5 cup Sugar Free Whipping Cream |15pcs Prawn |Some Basil |Some Sea Salt |Some Black Pepper Powder |Some Parmesan 

做法:
1. 洋葱、小番茄和大蒜切一切。
2. 切好后,把洋葱铺底。然后加入其他材料。
3. 倒入高汤和鲜奶油。
4. 盖好煮13分钟。然后放入虾和薄荷叶,煮一煮就可以上碟了。
Method:
1. Cut the onions, cherry tomatoes and garlic into small pieces.
2. Put the onions as the base in the pot, then add in cherry tomatoes, garlic, mint leaves butter and pasta on top.
3. Add in soup stock and whipping cream.
4. Cover the pot with lid then let it cook for 13 minutes. Add in prawns and mint leaves later and cook until the prawns are done. It is now ready to serve.

7. 香辣椰奶鸡肉宽面|Chicken Tagliatelle with Coconut Milk

材料 2人份:
洋葱 1颗大|意大利宽面 2把|灯笼椒 1/2 颗|辣椒 1/2 条 (喜欢辣的可以放多点)|圣女番茄 8-10颗|鸡胸肉|九层塔 适量|橄榄油 1汤匙|椰奶 1罐|鸡高汤 2杯 (480ml)|盐 适量|黑胡椒 少许|柠檬 1/2颗
Portion for 2:
1 Onion (large) | 2 portion Tagliatelle | 1/2 Bell Pepper | 1/2 Chilies | 1 Red Shallot | 红洋葱 1粒, 8-10 Cherry Tomatoes | 150g Chicken Breast | 150g, Some Basil |1 tbsp Olive Oil | 1 can Coconut milk |480ml Chicken Broth |Some Salt | Some Black Pepper | 1/2 Lemon

准备工作:
1. 洋葱和灯笼椒切丝,红洋葱头切末,圣女番茄切半。
2. 鸡肉切片后,加入少许的盐、酒和太白粉腌制一下。
Preparation:
1. Onion and bell pepper cut in shredded, red shallot finely chopped, cherry tomato cut in half.
2. Chicken breast cut slides, marinated with salt, Chinese wine, and cornstarch.

作法:
1. 洋葱放在锅底,再依序加入意大利面、灯笼椒、辣椒、番茄、红小洋葱、鸡肉和九层塔。
2. 加入椰奶、高汤和少许橄榄油。
3. 盖锅煮大概15分钟。
4. 起锅前撒上海燕和黑胡椒,然后再加入新鲜九层塔和少许柠檬汁。
Method:
1. Layer onion in the bottom of pot, follow by tagliatelle, bell pepper, chilies, red shallot, chicken and basil.
2. Add in coconut milk, chicken broth and olive oil.
3. Cooks for 15 minutes.
4. Seasoning with sea salt and black pepper, then chopped fresh basil and some lemon juice.

8.番茄意大利面|Linguine with Tomato Sauce

材料:
细扁面 350克|小番茄 250克 (切成两半)|蒜头 2 瓣 (切薄片)|洋葱(切薄片)|橄榄油 4汤匙|小辣椒 1条(切片)| 罗勒 4支|粗盐 1 汤匙|现磨胡椒 适量|水 900ml|帕马森起司 适量 (磨碎,上桌前使用)
Ingredients:
350g Linguine |250g Cherry Tomatoes (cut in half)| 2 cloves Garlic (slices) | 1 Onion (slices) |4 tbps Olive Oil|1 Chilies (slices) | 4 Fresh Basil |1 tbsp Coarse Salt |Some Freshly ground pepper | 900 ml Water |Some Freshly Ground Parmesan

作法:
1. 将所有的材料分别放入锅内。
2. 煮大概15分钟同时搅拌均匀。
3. 上桌前撒上Parmesan Cheese就完成了!
Method:
1. Add in all the ingredients.
2. Mixed evenly and cook for 15minutes.
3. After done, put some parmesan cheese!
