Dried oyster porridge makes a good hearty meal, especially when it tastes just like the one you had at Penang. Let's try this at home today!

槟城美食是大马人的最爱。每次去槟城都会“扫街”吗?现在不用去到槟城,平时也能解解馋。槟城蚝豉粥也是超特别的,小编还是第一次吃加入老抽的粥啊!

Ingredients | 材料:300g rice | 粘米 300克, 2 litres water | 水 2公升, 10 pcs dried oysters, rinsed and diced | 蚝豉(洗净,剁小粒)10粒

Braising Ingredients | 卤料:2 tbsp dark soy sauce | 老抽 2汤匙, 1/2 tsp pepper | 胡椒粉 1/2茶匙, 1 tbsp light soy sauce | 生抽 1汤匙, 3 cloves garlic, smashed | 蒜头(拍扁)3瓣, 1 tsp salt | 盐 1茶匙, 1 litre water | 水 1公升

Condiments | 配料:500g pork belly, rinsed | 三层肉(洗净)500克, 5 eggs, cooked and shelled | 鸡蛋(煮熟,剥壳)5粒, 2 pcs dried bean curd | 豆干 2片, 300g shark meat, rinsed, skinned and cut into pieces | 鲨鱼肉(洗净,去皮,切块)300克, 2 tbsp preserved turnip, rinsed and chopped | 冬菜(洗净,剁幼)2汤匙, 3 pcs Chinese cruller, sliced (optional) | 油条(切片,选择性)3条, 2 stalks spring onion, chopped | 青葱(切粒)2棵, 2 stalks Chinese celery, chopped | 芹菜(切粒)2棵, Some pepper | 胡椒粉 少许

Seasonings | 调味料:A pinch of salt | 盐 少许, A pinch of pepper | 胡椒粉 少许

Method | 做法:

1. Place pork belly, cooked eggs, dried bean curd and Braising Ingredients in a pot, cook for half an hour until the meat is tender. Remove and set aside to cool. Remove pork belly skin and cut the meat into small pieces. Cut dried bean curd into strips and egg into quarters, and set aside. Reserve the braising sauce for later use.
三层肉、熟蛋、豆干和卤料放入锅中卤半小时至肉熟。待冷后取出三层肉,去皮切幼。豆干切条,卤蛋切4块,放旁待用。保留卤汁。

2. Rub shark meat with some salt, pepper, light soy sauce and sesame oil, and marinate for half an hour. Stir-fry in 1 tbsp of heated oil until cooked and dry. Set aside to cool. Cut shark meat into small pieces, set aside for later use.
鲨鱼肉以少许盐、胡椒粉、生抽和麻油腌半小时,然后以1汤匙油炒至熟和干。待冷后切幼, 放旁待用。

3. Rinse rice and place into a rice cooker. Add water, braising sauce and dried oysters, cook until the rice is completely smooth. Add Seasonings and cover to cook for 15 minutes.
粘米洗净,倒入饭锅内,加入水、卤汁和蚝豉, 煮到白米软绵。加入调味料,盖着锅盖煮15分钟。

4. Place the porridge in a bowl, add pork belly, shark meat, preserved turnip, dried bean curd, egg, spring onion, Chinese celery, Chinese cruller and pepper on top before serving.
将粥盛入碗内,排入三层肉、鲨鱼肉、冬菜、豆干、蛋、青葱、芹菜、油条和胡椒粉,即可享用。
