Ingredients | 材料:
A: 200 g cashewnut |腰豆200克, 1 tsp turmeric powder |黄姜粉1茶匙, 1 tsp salt |盐1茶匙, 3 cups water |清水3杯
B: 300g chicken meat |鸡肉300克, 1/2 tsp turmeric powder |黄姜粉1/2 茶匙, 100 ml thick coconut milk | 椰浆头100毫升
C: 2 Tbsps cooking oil |食油2汤匙 , 1 tsp mustard seeds |菜籽1茶匙, 1 tsp “halba campor” |混合香料1茶匙, 2 big onions(sliced thinly) |大葱2粒(切薄片), 1 clove garlic (chopped) |蒜头1瓣(剁碎), 1 stalk curry leaf |咖哩叶1束, 2 birds eye chilly (broken into 2) |指天椒2条(一开二), 1 green chilly(just broken lightly) |青辣椒 1条(切开), 4 dried chilly(cut into 3cm lengths) |辣椒干 4条(剪3公分长段)
Seasoning |调味料: 1/2 tsp salt |盐 1/2 茶匙
Method | 做法:
1. Boil ingredients A for 15-20 minutes / until cashewnuts are soft. Set aside the cashew & reserve the stock. (pic 1)
把材料A煮15-20分钟至腰豆软身,置放一旁。(图1)
2. Cut chicken into 2cm chunks & marinated with 1/2 tsp turmeric powder. (pic 2)
鸡肉切成2寸大小块,用黄姜粉涂抹放置一旁待用。(图2)
3. Heat oil, add mustard seeds, 'halba campor' & when they start to pop, toss in the rest of ingredients C. (pic 3-4)
起锅热油,把C料的菜籽和混合香料炒至弹跳后加入其余C料爆香。(图3-4)
4. Saute for a few seconds before adding the marinated chicken pieces and saute for awhile. (pic 5)
加入鸡肉,继续翻炒。(图5)
5. Add the boiled cashew nuts and the stock from boiling thenuts, cook for 5 minutes before adding the thick coconutmilk, adjusting the seasonings to taste and turn off heat.(pic 6-8)
