总是喜欢把辣椒加入菜肴里面,吃起来会更开胃。就如这道醋烧排骨,加入一点的辣椒,酸辣都齐全,也是很好下饭的一道排骨菜肴,而且肉比较松。

500g pork rib / 猪腩骨排500克
3 red chili / 红辣椒3条(切段)
20g ginger / 姜 20克(切片)
3 pips garlic (chopped all) / 蒜米3瓣(剁碎)
Seasoning
2 tbsp oyster sauce / 蚝油 2汤匙
2 tbsp vinegar / 老醋 2汤匙
1⁄2 tbsp dark soy sauce / 老抽 1⁄2汤匙
1⁄2 tbsp sugar / 糖 1⁄2汤匙
Method
1. Chop ribs into small pieces and then blanch in boiling water.(pic 1-3)
排骨洗净斩小块,用滚水汆烫去杂质备用。(图1-3)

2. Heat oil in wok, sautéginger, garlic and red chili until fragrant, toss in ribs.(pic 4-5)
起油锅;用少许油爆香蒜姜和辣椒,倒入排骨翻炒。(图4-5)

3. Stir-fry ribs with high heat briskly until aromatic.
以大火把排骨快速翻炒至闻到香味为止。

4. Pour in water to cover the ribs, add in seasoning and bring to quick boil.(pic 6-7)
加入盖过排骨的清水再下调味料,大火煮滚。(图6-7)

5. Cover lid and simmer for 10 minutes; remove lid, turn to low heat and simmer for another 1 hour.(pic 8)
盖上锅盖焖煮十分钟后,打开锅盖搅拌均匀,转小火再煮上1小时。(图8)

6. Dish out to serve when gravy thicken.
焖至收汁为止,熄火盛盘享用。
