Ingredient and Portion
3 tbsp butter / 牛油 3汤匙
2 eggs (beaten) / 鸡蛋 2粒 (打散)
200g shrimp / 虾仁 200克
50g chopped spring onion / 青葱花 50克
20g chopped garlic / 蒜茸 20克
800g Japanese white rice / 日本白饭 800克
250g Unagi (diced) / 鳗鱼 250克 (切粒)
Seasoning
1/2 tbsp Japanese soy sauce / 日本酱油 1/2汤匙
4 tbsp Teriyaki sauce / 日本烧酱 4汤匙
1 tsp Japanese pepper / 日本胡椒粉 1茶匙

Topping: / 撒面用:
20g juliennes seaweed / 紫菜丝 20克
2 tbsp fried chopped garlic / 炸脆蒜米粒 2汤匙
1 stalk spring onion (chopped) / 青葱花 1颗
Method
1. Heat butter in wok, saute egg until fragrant, toss in shrimp, chopped spring onion and garlic.
烧热牛油,炒香鸡蛋,加入虾仁、葱花和蒜茸炒香。

2. Add in white rice and seasoning, stir-fry until well mixed, off heat. Make a well in the centre, pour in unagi and cover the rice, simmer for 3 minutes.
加入日本白饭和调味料炒匀至香,关火。扒个洞将鳗鱼粒倒入盖上3分钟。

3. Dish out, sprinkle toppings and serve.
盛起,上碟撒上紫菜,脆蒜米和葱花即可享用。
Tips
心得交流站:
烧热牛油不可以用太大火,牛油很容易烧焦。
Tips: Do not over heat the butter, it burns easily.
