Mint sauce: / 薄荷酱用料: 20g mint leaves / 20克 薄荷叶 200ml olive oil / 200毫升 橄榄油 2 tbsp fresh calamansi lime juice / 2大匙 桔子汁 2 tsp sugar / 2小匙 糖 1/4 tsp salt / 1/4小匙 盐
Method
1. Rinse chicken drumstick and pat-dry, season with marinade, marinate for at least 2 hours. 将鸡腿洗净,抹干水份,加入腌料拌匀,腌渍2小时。
2. Arrange marinated chicken drumstick on a baking tray, bake in a preheated oven over 180℃ for approximately 40-50 minutes until cooked, remove, keep aside. 把腌渍好的鸡腿排在烤盘上,盛入预热烤炉以180℃烤约40-50分钟至熟透,取出,上碟备用。
3. To make mint sauce, blend all mint sauce ingredients in a food processor until fine and smooth, dish out, ready to serve. 准备薄荷酱:将所有用料放入搅拌机捣烂 ,倒出备用。
4. Arrange roasted chicken drumstick on a serving plate, spoon in mint sauce, garnish with mint leaves. Serve hot. 将烤鸡腿上碟,淋上薄荷酱,然后以新鲜薄荷叶装饰,即可上桌。
