6 pcs big prawns / 大明虾 6 只
1⁄2 bowl tapioca flour / 薯粉 1⁄2饭碗
3 tbsp margarine / 白兰她 3汤匙
1⁄2 canned evaporated milk / 生奶 1⁄2 罐
10 sprigs curry leaves / 咖哩叶 10片
4 chili padi / 指天椒 4条
1⁄2 stalk lemon grass / 香茅 1⁄2枝
1⁄2 stalk Bunga Kandang / 姜花 1⁄2朵

Seasoning
1 tsp chicken powder / 鸡精粉1茶匙
1⁄2 tsp salt / 盐1⁄2茶匙
2 tsp sugar / 糖2茶匙
Method
1. Smash lemon grass and then shredded with all sub-ingredients and then chop finely. (pic1)
把配料全部剁碎切丝混合备用。(图1)

2. Trim prawns and cut a slit at the abdomen.(pic 2)
将大明虾剪去须脚,切背挑肠泥备用。(图2)

3. Heat oil in wok, coat prawns with tapioca flour and deep fry in hot oil with medium heat for about 1 minute; drain.(pic 3-4)
将大明虾沾上薯粉,放到油锅里以中火炸大约 1 分钟,捞起沥油。(图3-4)

4. Keep some hot oil in wok, add in margarine and toss in all sub-ingredients and sauté for about 1 minute until fragrant. (pic 5)
留少许热油在锅里,煮溶白兰她,加入所有配料以小火煮约1分钟。(图5)

5. Pour in evaporated milk and boil for 2 minutes, mix in all seasoning.(pic 6)
注入生奶煮2分钟至滚,加入其余调味料搅拌均匀。 (图6)

6. Toss in prawns and stir-fry until gravy thicken, dish out.(pic 7-8)
最后加入炸好的大明虾煮至奶皇汁略带浓凋,即可关火盛盘。(图7-8)
