Ingredient and Portion
Ingredients / 材料
300g duck meat / 鸭肉 300克
1 set duck carcass / 鸭骨 1副
approx. 200g fish ball / 鱼丸 约200克
1 packet, approx. 500g Kuey Teow/flat rice noodle / 粿条 1包/约500克
1000ml water / 清水 1000毫升
1 stalk Chinese celery / 芹菜 1棵
1 stalk spring onion / 青葱 1棵


Seasonings / 调味料
1 tsp salt / 盐 1茶匙
1 tbsp light soy sauce / 酱油/生抽 1汤匙
Method
Preparation / 准备工作
1. Chop spring onion and Chinese celery.
青葱和芹菜分别切细。

2. Rinse duck meat and fish balls separately.
鸭肉和鱼丸分别洗净。


Method / 做法
1. Scald Kuey Teow in boiling water until soft. Remove and put into bowls.
粿条烫软,捞起分入碗里。

2. Bring water to a boil. Cook duck carcass in it for approx. 1 hour.
清水入锅煮沸,放入鸭骨熬煮约1小时。

3. Cook duck meat in the duck soup. Remove and cut into slices.
鸭肉放入汤里煮熟,捞起切小片。

4. Cook fish balls in the soup. Put fish balls and duck slices to the bowls filled with Kuey Teow.
鱼丸放入鸭汤里煮熟,取出,和鸭肉一起放入 装粿条的碗里。

5. Season the duck soup with salt and light soy sauce. Pour over Kuey Teow.
鸭汤以盐和生抽调味,淋在条上。

6. Decorate with Chinese celery and spring onion. Serve.
以芹菜和青葱装饰即可。
