1/2 tbsp salt /盐 1/2大匙 1/2 tbsp rock sugar / 冰糖 1/2大匙 1 tbsp dark soy sauce / 黑酱油 1大匙
Method
(1) Cook all spices and seasoning with water in a pot, bring to boil, cook for 10 minutes. Add in duck, cover, bring back to the boil. Reduce to low heat and simmer for 45 minutes. 把清水入锅,加入所有香料和调味料同煮沸,滚煮10分钟,把鸭放入,盖上,煮沸后,改用慢火焖煮45分钟。
(2) Remove the duck, hang up to let it dry for 1-2 hours, ready to roast. 把鸭取出,吊起风干约1-2小时,备用。
(3) Mix all ingredients (B), rub all over into the cavity of the duck. Bake in the preheated oven at 200°C until golden in colour. Remove from heat, cut and serve. 把所有材料(B)混合,倒进鸭肚内,并涂抹均匀,盛入预热烤箱以200°C烤呈金黄色,盛起,剁块食用。
