Ingredient and Portion
Ingredients / 材料:
100g Australian beef fillet (thinly sliced) / 澳洲牛肉 100克(切薄片)
150g bitter gourd (cut into slices) / 苦瓜 150克(切片)
1 tbsp oil / 油 1汤匙
10g young ginger(sliced) / 嫩姜 10克(切片)
3 dried chilies (cut into sections) / 辣椒干 3条(剪段)
1 clove garlic (chopped) / 蒜头 1瓣(剁碎)
1 tbsp Shao Hsing wine / 花雕酒 1汤匙

Marinade/腌料:
1/4 tsp pepper / 胡椒粉 1/4茶匙
1/4 tsp sugar/ 白糖 1/4茶匙
1 tsp light soy sauce / 酱油 1茶匙
1/2 tsp sesame oil / 麻油1/2茶匙
1 tbsp oil / 油 1汤匙
1 tbsp water / 清水 1汤匙
1 tsp cornflour / 栗米粉 1茶匙

Sauce / 酱汁:
1 tsp oyster sauce / 蚝油 1茶匙
1 tsp light soy sauce / 酱油 1茶匙
1 tsp sugar / 白糖 1茶匙
100ml water / 清水 100毫升
Method
1. Season beef with marinade and put aside.
用腌料腌牛肉。

2. Scald bitter gourd pieces in hot oil over high heat for a few seconds then dish out. Add in marinated beef and scald briefly. Remove and put aside.
用热油泡苦瓜数秒钟后盛出,牛肉也拉一拉油后盛出。

3. Heat oil in a wok and saute ginger and garlic over low heat until aromatic.
另外起锅热油,把姜和蒜头爆香。

4. Add bitter gourd and sauce ingredients. Simmer for about 10 minutes.
加入苦瓜和酱汁材料,焖煮10分钟。

5. Put in beef fillet and dried chilies. Fry briskly over high heat. Sprinkle in Shao Hsing wine to sizzle. Dish out immediately.
加入牛肉和辣椒干,大火炒均后赞入花雕酒即可盛出。
