2 slices ham (seared)/ 火腿肉2片(煎过) 2 thick slices toasted bread/厚白面包2片 2 poached eggs(method refer to page 47)/水煮荷包蛋2个(做法请参考第47页) 4 tbsp Hollandaise sauce/荷兰酱4汤匙 Some chopped fresh parsley for garnish/剁碎洋芫荽适量
Method
1. Vigorously whisk the egg yolks and lemon juice together in a mixing bowl. 把蛋黄和柠檬汁混合,然后以手动搅拌器搅拌至松发。
2.Place the bowl over a saucepan containing barely simmering water with no contact to the water. Continue to whisk rapidly. Be careful not to let the eggs get too hot or they will scramble. 把蛋汁隔水继续搅拌,但不能接触到热水,以免蛋黄煮熟变硬。
3. Slowly drizzle in the melted butter and continue to whisk until the sauce is thickened and doubled in volume; and then season with dash of paprika & salt. 边搅拌边加入溶解牛油,搅拌至容量变双倍为止,然后以辣椒粉和盐调味。
4. Remove from heat place in a warm spot until ready to use. 熄火把荷兰酱放在温热处待用。
