Ingredient and Portion
1 chicken whole leg (deboned and cubed) / 鸡全腿1只(去骨切丁)
1 small egg(lightly beaten) / 鸡蛋1小粒(打散)
2 tbsp corn flour / 生粉2汤匙
1 tbsp wheat flour / 澄面粉1汤匙
20g young ginger (cut into thin strips) / 嫩姜20克(切丝)
1 onion (cubed) / 洋葱1粒(切丁)
6-7 dried chillies(cut into 3cm sections,seeds removed) / 辣椒干6-7条(剪3公分长段,去籽)


Seasonings:
¼ tsp salt / 盐¼茶匙
dash of MSG / 味精少许
⅛ tsp pepper / 胡椒粉⅛茶匙
½ tsp sesame oil / 麻油½茶匙


Sauce ingredients:
1 tbsp oyster sauce / 蚝油1汤匙
1 tbsp sugar / 白糖1汤匙
1 tsp sesame oil / 麻油1茶匙
½ tsp Shao Xing wine / 花雕酒½茶匙


Garnishing:
1 tbsp chopped spring onion / 大葱茸1汤匙
Method
1. Marinate chicken with seasonings for at least 20 minutes.
用调味料腌鸡肉至少20分钟;

2. Add beaten egg to the marinated chicken. Toss in corn flour and wheat flour mixture.
把蛋加入鸡肉,然后再拌入生粉和澄面粉;

3. Deep-fry chicken pieces till lightly golden brown and cooked through.Drain on paper kitchen towel.
把鸡肉炸至金黄色熟透后盛出,以纸巾吸干油;

4. Leave 2 tbsp oil in the wok and fry dried chillies, onion and young ginger,add in sauce ingredients to mix.
留2汤匙热油在锅里,把辣椒干、大葱及姜炒香后加入酱汁材料炒均;

5. Return pre-fried chicken to the wok and toss briefly.
把炸过的鸡肉回锅搅拌均匀即可盛出。
