黄酒在华人传统里是在女人生产过后必拿来做料理的,可是现在不一定了。在许多中餐厅里都会看到黄酒鸡或是其他都蛮受欢迎的。不过现在在家也能煮出这道黄酒苏冬虾冬粉了。

Ingredient and Portion
30g glass noodle / 30克 冬粉
100g young ginger (pounded) / 100克 嫩姜(捣烂)
1 tsp chopped garlic / 1小匙蒜茸
150g white squids / sotong (sliced) / 150克苏冬(切片)
150g medium prawns / 150克中虾
200ml glutinous rice wine / 200毫升黄酒
200ml water / 200毫升清水
Seasoning
1/2 tsp chicken stock powder / 1/2小匙鸡精粉
1/4 tsp pepper / 1/4小匙胡椒粉
1 tsp salt / 1小匙盐
1 tsp sugar / 1小匙糖
2 tbsp light soy sauce / 2大匙生抽
Method
1. Cook noodles into boiling water until cooked and soften. Dish out, then put into cool water and soak for 5 minutes. Dish out and drain, set aside.
把冬粉放入沸水中烫熟及软化,捞起,浸泡冷水中约5分钟,捞出 ,沥干水份,备用。

2. Heat up 2 tbsp cooking oil, add in ginger and garlic, stir-fry over low heat until fragrant.
镬里烧热2大匙食油,加入姜茸和蒜茸,以慢火炒香浓。

3. Put in squid and prawns, stirring constantly over medium heat until the colour of prawns are changes. Add the wine and water, bring to boil over high heat.
加入苏冬和虾,改用中火拌炒均匀至虾只转色后,注入黄酒及清水,大火煮沸。

4. Add the glass noodle and seasoning, stir for 2-3 minutes till combined. Dish out and serve hot.
加人冬粉及调味料,翻炒2-3分钟,即可上桌。
