Ingredient and Portion
300g duck / 300克 鸭肉
2 ginger slices / 2片 生姜
50g black dates / 50克 黑枣
15g Chinese astragalus / "Bei Qi" / 15克 北耆
1 tbsp wolfberry / 1大匙 枸杞
15g sliced dioscorea yam / 15克 淮山
800ml boiling water / 800毫升 沸水
Seasoning
salt to taste / 适量盐
Method
1. Cut duck meat into chunks, rinse and blanch in boiling water. Dish out and drain, put duck in a double boiler.
鸭肉剁块,洗净,用沸水汆烫过(焯水),捞起,放人炖盅。

2. Add the remaining ingredients and boiling water, cover with lid.
加入其余材料和沸水,盖上。

3. Double boil in a preheated steamer over medium heat for 2 hours, then season with salt. Serve hot.
盛入预热炖炉,或者蒸炉,中火炖制2小时,加盐调味,即可。
