Ingredient and Portion
450g durian flesh (mashed) / 450克 榴莲肉(压烂)
100g shredded white coconut / 100克 嫩椰丝
120g brown sugar / 120克黄糖
120g plain flour / 120克面粉
100g self-rising flour / 100克自发面粉
1 tsp salt / 1小匙盐
1 tsp baking soda / 1小匙苏打粉
200ml thick coconut milk / 200毫升浓椰浆
some bamboo skewers / 适量竹枝
Method
1. Mix plain flour with self-rising flour, salt and baking soda together, sieve into a mixing bowl.
将面粉、自发面粉、盐及苏打粉拌匀后,筛进搅拌盘子里。

2. Add in coconut milk, mashed durian, shredded coconut and brown sugar, then blend well to form a sloppy batter.
加入椰浆、榴莲肉、椰丝及黄糖,拌成稀松面糊。

3. Heat up oil in wok over medium heat. Using a spoon and drop a spoonfuls of batter into the hot oil. Deep-fry until the fritters are cooked and turn to golden colour.
镬里烧热油,用汤匙舀人适量面糊,放入热油里以中火炸熟至金黄色。

4. Dish out and drain on paper towels. Thread the fritters with bamboo skewer, serve.
捞起,沥油后,用竹枝串起,即可食用。
