for those of you who do not fancy tomatoes, there is always the cream based pastathe carbonara is the only cream base pasta in the menu if i am not mistakenthey do not serve alfredo in the menuthe carbonara comes with beef bacon but i always think pork bacon make a better accompaniment for carbonarathe sauce is not too thick nor too wateryit is just nice consistency to cover each fetuccini

i don't think i have ever tried pomodoroit is a very simple sauce to prepare unlike bolognaise or marinara or alfredothe ingredients for the sauce are pretty basic i.e. tomatoes, olive oil and basilthis is a vegetarian dish because the only other ingredient is the egg plantthe eggplants are cubed and they are nice and softit is actually quite hard to cook eggplants because they stick to the pan and most chefs use a lot of oil to make sure it doesn'tbut this dish was not oily at all
