Ingredients | 材料:500g glutinous rice (wash and soak 4 hours) | 糯米500克(洗净,浸泡4小时),3 tbsp oil | 油3汤匙, 1 tbsp chopped garlic | 蒜茸1汤匙, 50g dried shrimp (wash and soak 5 minutes) | 虾米50克(洗净,浸泡5分钟), 100g lean meat (diced) | 瘦肉100克(切丁), 4 Chinese mushroom (wash and soak 5 minutes) | 冬菇4朵(洗净,切丁), 2 eggs (beaten) | 鸡蛋2粒(打散)

Seasoning | 调味料:1 tsp sugar | 糖1茶匙, 1 1/4tsp salt | 盐1 1/4茶匙, 1/3tsp pepper | 胡椒粉 1/3茶匙, 1 tbsp oyster sauce | 蚝油1汤匙, 3 tbsp dark soy sauce | 黑酱油3茶匙, 100g chicken stock | 鸡高汤100克, 50g toasted peanut | 花生米50克(烤香)

Garnishing | 装饰用 (适量 ):Fried shallot flakes | 炸葱片, chopped spring onion and red chili 1 clean cloth | 葱花、辣椒粒干净的湿布1条

Method | 做法:
1.Boil water in steamer, cover cloth on steaming tray, pour in drained glutinous rice,steam in high heat for 45 minutes;sprinkle water on top of rice during a few intervals until thoroughly cooked.
准备蒸笼加水煮滚,铺上湿布蒸,然后将沥干水份的糯米倒入,加盖用大火蒸大约45分钟,不过需要不断的开盖用手沾上水,洒在糯米上,蒸至熟透。

2.Heat 3 tbsp oil in wok, saute garlic and dried shrimp until dried shrimp dry up;toss in meat and mushroom and stir-fry until cooked;add in egg sauce and stir-fry briskly until cooked.
烧热3汤匙油,蒜茸和虾米同时倒入,爆香至虾米干身,即可加入瘦肉和冬菇炒至熟透,才加入鸡蛋液,快手搅拌炒至鸡蛋熟。

3.Toss in steamed glutinous rice and seasoning,follow with peanut and then place onto tray again and steam for another 20 minutes.
加入蒸熟的糯米和调味料炒匀,接着加入花生米拌匀,即可倒在蒸盘上,用大火再蒸20分钟。

4.To serve, sprinkle garnishing on top.
上碟,撒上装饰料即可享用。
